This is really one of those take what I have and throw it into the food processor types of dishes that is either hit or miss. Lucky for me it, it was a bull’s-eye.
1. Combine 2 cups of frozen peas, 1 lightly steamed cubed sweet potato, 1 tablespoon garlic, 1 cup water, salt + pepper, and fresh sage in a large sauce pan. Allow mixture to come to a low boil, stirring periodically.
2. Add contents of sauce pan to a food processor or blender and puree until mixture reaches a chunkier consistency.
3. Spoon atop a grain of your choice and garnish with artichoke hearts and a pinch of fresh sage.
