Brace yourselves, it was not I who crafted this pizza fit for kings. It was Chris (who was featured in The Wall Street Journal Style this week), my star pupil. Whole wheat dough (homemade or store bought)
eggplant roasted pepper spread from Trader Joe’s
salt + pepper
Roll out a nice circular disk of dough and spread with a layer of eggplant spread. Sprinkle with desired seasonings. Spread pepperjack and feta cheese over the sauce and dot with spinach leaves. Bake at 350 degrees for 15 minutes.
