Watermelon for Dinner

Summer time makes me thirsty. That sticky humidity, the bright sunshine, the  heat- yes we are in the dog days all right.  And I don’t know about you, but when I am in a state of perpetual perspiration, a big ole bowl of noodles does not sound appetizing. I dream in smoothies, juices, ice cream floats, and milkshakes. Mastication is over-rated when the temperature rises.Summer time salads are my front line soldiers. Let’s face it, a girl cannot live on juice alone.   My absolute favorite to come home to is the watermelon salad. It’s simple, refreshing, and full of star ingredients. Pair with a slice of avocado and toast or a grilled filet of fish for  crisp summer meal that does anything but bog you down.

2 cups cubed watermelon
1 cup crumbled feta cheese
1 package of broccoli slaw
1 cup chopped spinach
1 cup diced carrots
1 cup diced red bell pepper

Combine ingredients and toss with a champagne vinaigrette dressing. Refrigerate for half hour before serving.
