Dinner, for one.

This is what my meal time alone looks like. Note the computer serving as television serving as make-shift dinner date on the counter. Note the stack of books I should be reading to the right. Note the fact that the computer serving as television serving as make-shift dinner date is closer to me than the stack of books. Girl has got to have her priorities straight.

Dinner solo is the perfect opportunity for a wrap. and an apple. and a mish-mosh of leftover chickpea cilantro salad with some carrots. Carrots are good for your eyes. Watching television from a close proximity is not.

Egg Sandwich Wrap

1 whole wheat tortilla, warmed

1 fried egg, sunny side up

smear of fig butter

handful of feta cheese

Assemble and serve with whatever the heck you can find because you’ve got television to watch and books to not read and a quiet empty apartment that you wish was full of friends.
