Just because you’ve been waking up at 5:30 am to hit the gym before working from 7:30 am until late into the afternoon doesn’t mean you can’t eat a balanced dinner. Ok it’s tough to not fall face first into your plate of dinner. Exhaustion hits hard around 7pm. Stick it out; the pay-off is worth the heavy eyes and unstoppable yawns.

1 whole wheat tortilla
Tomato sauce ( I use Trader Joe’s Fat-free Pizza sauce)
Part-skim mozzarella cheese, grated
handful of spinach
baby bella mushrooms
salt + pepper to taste
This is one of the easiest dishes ever. Simply preheat your oven to 350. While she warms up, coat a whole wheat wrap in tomato sauce, cheese, spinach, and mushrooms. Sprinkle with basil, salt, and pepper. Bake for about 10-12 minutes until cheese is melted and edges of tortilla are golden brown.
