Let me tell you a little tale. It involves a single girl, a Thursday evening, and a sandwich. It goes a little something like this.
One sunny Thursday evening, after a day of work and a handful of errands, a young girl returned to her apartment ready for a quiet evening spent with her fiancée. She busied herself with some chores, a little this, a little that, until the phone rang at 6:30 p.m. “Hello,” she said.
“I have to stay late, maybe 9, maybe 10…”the voice replied, the dejection thick enough to slice.
The young girl was without plans, without company, and hungry. The young girl also lacked motivation to get herself out to the grocery for a little kitchen restock. It was time for the pantry raid. On hand she had half a slice of whole wheat ciabatta, an egg, some spinach, 1/4 a cup cottage cheese, and some good raspberry jam. A masterpiece was born.
Jam Cheese Egg Sandwich for One
1 slice of bread
A handful of spinach
1/4 cup cottage cheese
2 tablespoons jam
sprinkle of s + p
Lightly toast the bread in an oven at 350 degrees for about 5 minutes. Meanwhile prepare egg according to preference. I enjoy runny eggs, sunny side up myself. Coat the bread with a spread of jam, followed by cottage cheese, followed by spinach. Place egg a top and garnish with S + P. Enjoy however you prefer. You’re alone so dig in!
