Dinner last night was a repurposed repeat, my favorite. We threw it together while tackling laundry, dusting, and sweeping. Lucky for me Wednesday evening’s tofu stir fry yielded enough leftovers to constitute round two. I sautéed some kale with maple syrup and salt plus a little cayenne then topped the flavor-punched kale with warmed up veggies, a dash more soy sauce, and a fried egg. Dinner for two doubly delightful (even amidst the pile of chores!).
