Yesterday was a rainy day….like seriously, it poured from noon until we fell asleep.
So we made the best of it. We grabbed bagels and ate them in bed watching the best movie in the world x 1000 million, and no it’s not up for discussion, Moulin Rouge. We worked on wedding invitations. We read books (or tried to anyway). We sang loudly. Sorry neighbors!Then it was early afternoon with just enough time before the weekly yoga hour and my fingers began itching for a project, something easy, something simple, something pleasing, and something requiring no trips to the grocery.
Peanut Butter Blueberry Snack Bread

2 cups flour (white, wheat, spelt etc)
1 tbsp baking powder
pinch and a half cinnamon
1/3 cup peanut butter
1/4 cup sugar or sweetener (I used agave syrup and a tbsp brown sugar)
1 mashed banana
1 cup milk
1/2 cup yogurt
handful of fresh blueberries
Begin by mixing the dry ingredients together until well sifted. Add the wet ingredients one at a time and stir, stir, stir. Pour into greased loaf pan and bake at 350 degrees for 30-40 minutes. Bread will rise and turn somewhat golden on the exterior, and you apartment will smell like a bakeshop. Serve warm or room temperature with a little jam, peanut butter, or real butter and a mug of tea.
